Publicans can be a very traditional lot. Although they enjoy incentive trips, courtesy of their employers at the brewery, to some of Europe's finest destinations, they are rarely prepared for the subtleties of the local cuisine. All too often, cries of "are there any chips with that?" precede the maitre d's explanation of the menu, while regional dishes are waved away with cursory comments about "foreign muck".
