Eden Hotel Collection acquired the property just months ago, with the investment being the first phase in a wider renovation programme. The group is spending £700K on restoration work and £1.3m on transforming the restaurant, brasserie and public rooms on the ground floor. The work is due to be completed by Easter.
The properties current Edwardian Restaurant will be renamed the Great Western Restaurant, while the Castle Bistro will become Smith’s Brasserie, and new menus are being developed for both by chef Simon Haigh.
The estate includes a 64-bedroom hotel, an 18-hose championship golf course, a spa, country lodges and an outdoor pursuits centre.
