C&IT caught up with Heston Blumenthal, who works with event caterer Rhubarb, at the Science Museum for Strictly SW7 last night (4 March).

How closely do you work with Rhubarb?

I help Rhubarb creatively. Rhubarb chefs have been to my restaurant in Bray, where we worked on a number of ideas for dishes. 

We decided to move into event catering a few years ago because we were getting approached by loads of events to do catering. We had two options: set up our own company or set up with the best in the business. We didn't have the resource to set up on our own so we did our due diligence and Rhubarb came out on top. 

Fixed-site catering is becoming a big part of the business now with venues such as the Royal Albert Hall and we're helping them to grow that side of the company.

What is the secret to event catering?

Every event is different, which is what makes the events industry such an exciting and challenging sector to work in. 

There is no magical fairy dust but the key focus must be on quality. In an event environment, rather than a restaurant, you can be much more experimental – people want to try something new.
