Both the hotel and the restaurant are scheduled to open in spring 2011. Cut will feature prime dry and wet aged beef and pan-roasted lobster.

"London has some of the very finest restaurants in the world," said Wolfgang Puck. "I’ve been waiting for the right time and the right partner to bring Cut to the city’s residents and visitors. With its sharp design and incomparable service, Dorchester Collection’s 45 Park Lane will be the perfect address for CUT in London."

Commenting on the collaboration, Christopher Cowdray, CEO of Dorchester Collection, said: "Wolfgang Puck’s CUT restaurant is critically acclaimed in exceptional locations in America. This is an exciting development in our vision for Dorchester Collection to be synonymous with offering the best and most popular restaurants in each hotel’s location."
